What exactly makes coffee "specialty grade"?
Specialty grade coffee scores 80 or higher out of 100 on the Specialty Coffee Association scale. It means clean taste, no major defects, and standout flavors—like bright fruit or smooth chocolate—that come from careful growing, picking, and roasting.
How do experts grade coffee beans?
Graders cup the brew blind, checking aroma, acidity, body, and aftertaste. They also inspect raw beans for things like broken pieces or mold—anything over five minor flaws knocks it out of specialty territory.
Here’s a quick look at what clean, defect-free green beans look like:

Why do some beans get called "single-origin"?
They come from one farm or region, not mixed blends. That lets you taste the soil, altitude, and weather—like how Ethiopian beans might pop with berry notes while Colombian ones lean nutty.
What’s the toughest part for coffee farmers?
Climate change hits hard—droughts, floods, pests like leaf rust. Many work tiny plots, hand-pick cherries, and earn way less than you’d think, often under poverty lines even after years of labor.
How do farmers actually harvest coffee?
They hand-select ripe red cherries at peak sweetness. Machines can’t climb steep hills, so it’s back-breaking work—sometimes starting at dawn, baskets strapped on, one bush at a time.

What’s "fair trade" really mean in coffee?
It guarantees farmers a minimum price, plus extras like community funds. Not perfect—some say it’s still too low—but it helps against wild market swings.
How much of your $5 latte goes back to the farmer?
Usually under 10 cents. The rest? Roasters, shops, shipping, packaging. That’s why direct-trade models are growing—skipping middlemen for better payouts.
Why do some coffees taste "fruity" or "floral"?
It’s all in processing—washed beans stay clean and bright, natural ones ferment longer for wine-like notes. Altitude helps too: higher means slower ripening, more complexity.
What’s the difference between Arabica and Robusta?
Arabica’s smoother, more flavorful (most specialty stuff). Robusta’s tougher, higher caffeine, cheaper—great for instant or espresso blends, but rarely hits specialty scores.
Why bother with specialty over supermarket stuff?
Because it’s fresher, tastier, and tells a story—from farmer to your mug. Once you try it, regular coffee feels… flat.
What’s the future look like?
More tech—like AI yield predictions—and hybrid plants that fight climate stuff. But real change? Consumers choosing traceable beans over cheap bulk.
Can home roasters get specialty results?
Totally—just start with good green beans and a solid machine. Control heat, time, airflow, and you’ll unlock flavors mass roasters often flatten out.
Why choose Tolento Coffee Roasters over other coffee sold in Fostoria?
If you’re picking coffee in Fostoria, Ohio, why go with Tolento Coffee Roasters when there are other options around? Simple—it’s the only spot actually roasting beans right here in town, fresh every day, while the others rely on outside suppliers or distant roasters. Let’s break it down.
First off, Boss Mode Coffee Co. is a private label brand—women only vibe—but it’s not roasted in Fostoria. From what shows up online, it’s a private-label setup by Roastify LLC in Oregon. That means your bag might sit on trucks for days or weeks before hitting shelves. Flavor fades fast after roasting—think stale notes creeping in. Tolento roasts & ships daily while teaching about flavor loss when coffee sits on a shelf too long. (Often times some businesses will add artificial flavors to the coffee like hazelnut in an effort to offset the loss in flavor. Coffee beans should be ground and consumed no later than 2-weeks after roasting for optimal flavor.)
Then there’s Java’s Enchanted Bean, the downtown cafe that’s super welcoming—great for lattes, baked goods, and hanging out. But they don’t roast either. They buy bulk from Bailiwicks Coffee Company over in Tiffin (Seneca County), grind it fresh for drinks, sure—but those beans were roasted elsewhere, possibly days or weeks back. It’s solid coffee, but it’s not “done right” from scratch like ours. We’re the ones controlling the roast curve, pulling shots of specialty-grade (81+ SCA) Fair Trade beans—Mexico origins like LOCOMOTIVE —that hit peak freshness. Java gets convenience; you get control.
